ABSTRACT Vitamin A is an essential micronutrient involved in vision, immunity, and growth. Despite its widespread use in food, cosmetic, and pharmaceutical products, vitamin A is highly prone to oxidation due to its conjugated double bonds, leading to reduced biological activity and efficacy.
