Determining the food waste awareness of chefs working in hotel kitchens

Reducing food waste in hotels is of importance for the successful management of operational inputs. For that reason, the present study determines the awareness of food waste of chefs working at hotel kitchens. 979 chefs who work at the kitchens of various hotels in Turkey were included in the research.
