Synergistic Enhancement: Whole Wheat Substrate Improves Memory in Mice by Optimizing Folate Metabolism and Systemic Antioxidant Capacity

open access: yesFood Bioengineering, Volume 5, Issue 2, Page 244-258, June 2026.
ABSTRACT This study rigorously assessed the impact of folic acid‐fortified whole wheat products on mitigating mild liver injury caused by prolonged excessive folic acid consumption, improving folic acid bioavailability, and enhancing spatial cognitive functions in mice over a 48‐day intervention period.

Edible Antifungal Coatings Based on Litchi Chinensis Seed Starch Enriched With Pericarp Procyanidins for the Postharvest Preservation of Strawberries

open access: yesFood Chemistry International, Volume 2, Issue 2, Page 200-210, June 2026.
Lychee starch coatings enriched with procyanidins showed strong antifungal activity and effectively preserved strawberry quality postharvest, reducing weight loss, decay, and senescence. This highlights their potential as a sustainable natural alternative for shelf‐life extension and fungal control in fresh produce.

Normative T1 and T2 Brain Atlases Across the Adult Lifespan in a Chinese Cohort: Multicenter Quantitative MRI Benchmarks for Ageing and Neurodegenerative Research

open access: yesHuman Brain Mapping, Volume 47, Issue 8, June 1, 2026.
Normative voxel‐wise T1 and T2 brain atlases were constructed from 947 healthy adults across 11 imaging centers. The atlases model age‐ and sex‐related trajectories with high intersite reproducibility, providing quantitative reference maps for individual‐level interpretation and harmonized studies of brain aging and neurodegeneration.
