Biosynthesis and Application of Catechins and Their Derivatives in Camellia sinensis
Food Science &Nutrition, Volume 13, Issue 12, December 2025.This review summarizes the biosynthesis, structural diversity, and functional properties of catechins in tea. It highlights their tissue‐specific accumulation in different tea tissues and discusses the potential applications of catechin derivatives in functional foods and health‐related products.
