Comparative study on the use of seasoned or unseasoned casks made of wood from different origins for the ageing of Sherry vinegar

open access: yesJournal of the Science of Food and Agriculture, Volume 104, Issue 3, Page 1271-1281, February 2024.
Abstract BACKGROUND In the present study, the ageing process of Sherry vinegar in used (seasoned) or new casks made of chestnut, American oak, Spanish oak or French oak wood has been investigated, considering that no research has investigated whether this seasoning has a definite influence on the final composition of the aged beverage. The polyphenolic

Supermicrosurgery with perforator‐to‐perforator anastomoses for lower limb reconstructions – A systematic review and meta‐analysis

open access: yesMicrosurgery, Volume 44, Issue 1, January 2024.
Abstract Background Supermicrosurgical flaps based on perforator‐to‐perforator microanastomoses have been described for lower limb reconstruction. This approach offers the benefit of raising short pedicles while sparing axial vessels, which effectively enables complex reconstructive techniques in comorbid patients at high risk of reconstructive failure.

Fog controls biological cycling of soil phosphorus in the Coastal Cordillera of the Atacama Desert

open access: yesGlobal Change Biology, Volume 30, Issue 1, January 2024.
Soils in hyper‐arid climates show indications of past and present forms of life despite extreme water limitations. We investigate the biological cycling of soil phosphorus (P) in response to variations in fog frequency and rare rainfall events. Our study suggests that fog plays a key role in sustaining in biological P cycling and, thus, life up to 10 ...

Understanding the Influence of Rheology on Biofilm Adhesion and Implication for Food Safety

open access: yesInternational Journal of Food Science, Volume 2024, Issue 1, 2024.
Understanding biofilm rheology is crucial for industrial and domestic food safety practices. This comprehensive review addresses the knowledge gap on the rheology of biofilm. Specifically, the review explores the influence of fluid flow, shear stress, and substrate properties on the initiation, structure, and functionality of biofilms, as essential ...
