Sustainable Food Proteins, Volume 3, Issue 4, December 2025.The aims of this work were to obtain bioactive peptides from brewer's spent yeast (BSY) proteins and to evaluate its antihypertensive and neuroprotective properties before and after the simulated gastrointestinal digestion and in vitro colonic fermentation process.
