Summary 1.A study has been made of the factors affecting the hydrolysis of pure solutions of lactose by heat. The velocity constant (K · 10 4 ) for the reaction varied with the time and temperature of hydrolysis and the acid and lactose concentration of the solutions. Values for K · 10 4 ranged from 11 at 100° C. to 1904 at 165° C.

Freezing Point Measurement of Lactose Hydrolysis in Acid Whey and Lactose Solutions
Abstract A method for determining lactose hydrolysis by freezing point determinations is described. There is a direct relationship between freezing point and lactose hydrolysis in neutralized acid whey (r = 0.985) and lactose solutions (r = 0.998).
