Cloning and Characterization of a New β-Galactosidase from Alteromonas sp. QD01 and Its Potential in Synthesis of Galacto-Oligosaccharides

open access: yesMarine Drugs, 2020
As prebiotics, galacto-oligosaccharides (GOSs) can improve the intestinal flora and have important applications in medicine. β-galactosidases could promote the synthesis of GOSs in lactose and catalyze the hydrolysis of lactose.

A calorimetric and equilibrium investigation of the hydrolysis of lactose

open access: yesJournal of Biological Chemistry, 1989
The thermodynamics of the hydrolysis of lactose to glucose and galactose have been investigated using both high pressure liquid chromatography and heat-conduction microcalorimetry. The reaction was carried out over the temperature range 282-316 K and in 0.1 M sodium acetate buffer at a pH of 5.65 using the enzyme beta-galactosidase to catalyze the ...

The Acid Hydrolysis of Lactose and the Preparation of Hydrolyzed Lactose Sirup

open access: yesJournal of Dairy Science, 1945
Summary 1.A study has been made of the factors affecting the hydrolysis of pure solutions of lactose by heat. The velocity constant (K · 10 4 ) for the reaction varied with the time and temperature of hydrolysis and the acid and lactose concentration of the solutions. Values for K · 10 4 ranged from 11 at 100° C. to 1904 at 165° C.

Lactose hydrolysis by free and fibre-entrapped β-galactosidase from Streptococcus thermophilus

open access: yesAgricultural and Food Science, 1993
To study lactose hydrolysis by β-galactosidase, this enzyme was produced from Streptococcus thermophilus strain 11F and partially purified by acetone and ammonium sulphate fractionation, and ion exchange chromatography on a Q Sepharose FF column. Lactose

Freezing Point Measurement of Lactose Hydrolysis in Acid Whey and Lactose Solutions

open access: yesJournal of AOAC INTERNATIONAL, 1980
Abstract A method for determining lactose hydrolysis by freezing point determinations is described. There is a direct relationship between freezing point and lactose hydrolysis in neutralized acid whey (r = 0.985) and lactose solutions (r = 0.998).

EFFECTS OF LACTOSE HYDROLYSIS AND MILK TYPE ON THE QUALITY OF LACTOSE-FREE YOGHURT

open access: yesJournal of Engineering Science, 2023
The purpose of the work was to investigate the influence of different lactose hydrolysis processes, the contribution of the enzyme and the milk type on the characteristics of the obtained lactose-free yogurt. The analysis was performed on non-hydrolyzed yogurt (control sample), the pre-hydrolyzed yogurt (that was hydrolyzed before fermentation), and ...
