Synergistic stabilization of Pickering emulsions by a mixture of surfactants and colloidal particles has received increasing interest in recent years but only a few of them can produce high internal phase double emulsions (HIPDEs) with good stability. In

Lecithin–water systems display a variety of phases. Several of these phases, observed at a high temperature in the presence of small amounts of water, belong to a class of structures recently discovered in the anhydrous divalent cation-soaps. In these structures the polar groups are clustered in rod-shaped regions, embedded in a disordered paraffin ...

Synergistic interactions between lecithin and fruit wax in oleogel formation.
Food & Function, 2018In this study, the effect of lecithin (LEC) on the crystallization and gelation of fruit wax (FW) with sunflower oil was researched. A synergistic effect on the gel strength was observed at FW : LEC ratios of 75 : 25 and 50 : 50, compared to the ...

Composition of biliary lecithins
Clinica Chimica Acta, 1967Abstract Lecithins in bile from three species, i.e. man, ox and dog have been fractionated on silica gel-G silver nitrate plate in respect to unsaturation in their fatty acids moiety. Seven bands were separated in man, six in ox and five in dog, each having specific fatty acids composition.
