THE PREPARATION OF EGG LECITHIN

Canadian Journal of Research, 1948
Lecithin completely free of amino nitrogen and having N/P ratios of 1.00 to 1.01 has been obtained by cooling 10% solutions of mixed egg phospholipides in absolute ethanol to −35 °C. and eliminating the insoluble portions by filtration. These samples of lecithin have been considerably more unsaturated (I.N. 70 to 80) than those prepared by the cadmium

Differential scanning calorimetric studies of the thermotropic phase behavior of membranes composed of dipalmitoyllecithin and mixed-acid unsaturated lecithins.

Canadian Journal of Biochemistry, 1980
The lecithins 1-palmitoyl-2-oleoyl-sn-glycero-3-phosphocholine (POPC) and 1-stearoyl-2-oleoyl-sn-glycero-3-phosphocholine (SOPC) have been synthesized by reacylation of the appropriate lysolecithins with fatty acid anhydrides.

Effects of native and enzymatically hydrolysed soya and oat lecithins in starch phase transitions and bread baking

, 1998
The effects of oat and soya lecithins and their hydrolysates on crystallisation of wheat starch gel and on bread structure were studied. In baking studies the lecithins were compared with commonly used commercial emulsifiers.

Identification of character impact odorants of different soybean lecithins.

Journal of Agricultural and Food Chemistry, 1999
The potent odorants of standardized, enzymatically hydrolyzed, and deoiled soybean lecithins were characterized systematically by combined gas chromatography/mass spectrometry and olfactometry.

Preparing microemulsions with lecithins

, 1995
We present the results of the first in a series of studies on the microemulsification of hydrocarbons by biological amphiphiles. As such we use lecithins (C m ) 2 PC of well-defined carbon number m from 8 to 16 and n-alkanes of carbon number k from 8 to ...

Action of lecithin-cholesterol acyltransferase on sonicated dispersions of lecithin and cholesterol and on lecithin-cholesterol-protein complexes

Biochimica et Biophysica Acta (BBA) - Lipids and Lipid Metabolism, 1971
Abstract The plasma enzyme lecithin-cholesterol acyltransferase was shown to be able to utilize lecithin-cholesterol mixed dispersions as substrate for esterification. However, dispersion with a lecithin/cholesterol molar ratio of at least 3 are required for effective esterification of dispersed cholesterol.

Lecithin in Parkinson’s Disease

1980
Pathological and biochemical evidence reviewed favours the hypothesis that the dementia seen in Parkinson's disease, particularly after long-term levodopa therapy, is akin to Alzheimer's disease. We postulate, in late Parkinson's disease, the development of a relative cholinergic deficiency due to the accelerated process of aging and the presence of ...
