Host metabolic benefits of prebiotic exopolysaccharides produced by Leuconostoc mesenteroides
Fermented foods demonstrate remarkable health benefits owing to probiotic bacteria or microproducts produced via bacterial fermentation. Fermented foods are produced by the fermentative action of several lactic acid bacteria, including Leuconostoc ...

Extrusion of Dissolved Oxygen by Exopolysaccharide From Leuconostoc mesenteroides and Its Implications in Relief of the Oxygen Stress [PDF]
Strains of Leuconostoc are generally facultatively anaerobic and exposure to oxygen might be detrimental; therefore, strategies to combat the oxygen stress are essential for these bacteria to survive and flourish in the oxygenic atmosphere.

Anti-Inflammatory Effects of Hermetia illucens Fermented With Riboflavin-Producing Leuconostoc mesenteroidesKCCM13067P in RAW 264.7 Cells and Colitis Mouse Model. [PDF]
Fermentation of Hermetia illucens with riboflavin‐producing Leuconostoc mesenteroides KCCM13067P enhanced vitamin B2 derivatives and bioactive metabolites, including amino acids and amines. The fermented product (HeHi_Lm) suppressed inflammatory responses in LPS‐stimulated RAW 264.7 macrophages and alleviated DSS‐induced colitis in mice.

Lysogeny in Leuconostoc oenos [PDF]
Thirty strains of Leuconostoc oenos were exposed to mitomycin C to induce lysogenic bacteriophages. Lysis curves typical for lysogenic strains were obtained with 19 strains. Indicator strans were found for 17 of these phages. Five were characterized by electron microscopy, lytic spectrum, molecular masses of the proteins, sequencing of five N-terminal ...

Reclassification of Leuconostoc argentinum as a later synonym of Leuconostoc lactis [PDF]
Leuconostoc argentinum, Leuconostoc lactis and ten related strains from Romanian dairy products formed a single cluster, clearly separated from other Leuconostoc species, after numerical analysis of repetitive extragenic palindromic-PCR patterns, whole-cell protein profiles (SDS-PAGE) and fluorescent amplified fragment length polymorphism (FAFLP) band ...
