Increasing trade of ready to eat foods such as cookies highlights an interest in quality defects (cracking, checking due to non-homogenous moisture distribution) during baking. The most important parameter resulting in adverse quality changes is non-homogenous moisture distribution due to diffusion and external convective mass transfer coefficient.

A Correlation for Mass Transfer Coefficients in Elbows
CORROSION 1998, 1998Abstract Mass transfer can have a significant effect on corrosion rates depending on the solution chemistry and flow conditions. Therefore, knowledge of the distribution of mass transfer coefficients along the flow geometry can be useful in determining the severity of corrosion rates in situations where mass transfer is a factor. In this

Mass transfer coefficients in mixer—settlers
Journal of Applied Chemistry and Biotechnology, 1973AbstractMass transfer coefficients have been determined for transfer into a highly viscous phase in a stirred tank involving high Schmidt numbers. The results have been used to compute mass transfer coefficients in the extraction of free fatty acids from oils using alcohol and show good agreement with experimental results.

Mass and heat transfer coefficients
2013In a blood oxygenator, the blood spends approximately 2 s passing through the device. Estimate a minimum value for h m , the mass transfer coefficient characterizing oxygen transport from the plasma to the inside of a red blood cell (RBC), such that the RBCs are completely (i.e.

Mass‐transfer coefficients in washcoated monoliths
AIChE Journal, 2004AbstractThe asymptotic mass‐transfer coefficients are determined in washcoated monoliths of various geometric shapes by solving the convection–diffusion equation in the fluid phase coupled with the diffusion–reaction equation in the washcoat. The dependency of the asymptotic Sherwood number (Sh∞) on washcoat properties (relative effective washcoat ...

Film Mass Transfer Coefficient Expressions for Electroosmotic Flows
Journal of Colloid and Interface Science, 2000Expressions are developed and presented that could be used to determine the film mass transfer coefficient of a solute in electroosmotic flows. In contrast to pressure-driven flows at low Reynolds numbers where the film mass transfer coefficient is independent of the linear characteristic dimension of the channel for flow, in electroosmotically driven ...

SURFACE MASS TRANSFER COEFFICIENTS FOR WOOD
Drying Technology, 1993ABSTRACT Experimentally determined mass transfer coefficients for wood surfaces are often much lower than theoretically and experimentally determined coefficients for other surfaces. An investigation of this is made by comparing mass transfer coefficients for water and saturated non-wood surfaces, with coefficients measured for wood surfaces.

Mass transfer coefficients on truncated slabs
Chemical Engineering Science, 1969Abstract Local and average mass transfer coefficients on a sharp-edged plate and on truncated slabs of various thicknesses were obtained experimentally. The results show that the mass transfer coefficients do not only depend on the air velocity and the distance from the leading edge, but that the thickness of the slabs is also of significance.

Boundary-Layer Meteorology, 2005
The convective heat transfer coefficient (CHTC) of an urban canopy is a crucial parameter for estimating the turbulent heat flux in an urban area. We compared recent experimental research on the CHTC and the mass transfer coefficient (MTC) of urban surfaces in the field and in wind tunnels. Our findings are summarised as follows.
