Activation of latent collagenase by microbial plaque
Sterile extracts of whole human microbial plaque released substantial latent collagenolytic activity in gingival collagenase preparations, homogenates of polymorphonuclear leukocytes, and tissue macrophages. The plaque activation factor was thermolabile, nondialyzable, and had essentially no inherent collagenolytic activity.

Improved Tenderness of Restructured Beef Steaks by a Microbial Collagenase Derived from Vibrio B‐30
ABSTRACT To reduce connective tissue toughness Vibrio B‐30 collagenase was evaluated for its ability to degrade muscle collagen in a restructured beef (RSB) product. Dissected muscles pooled from clods of 4 USDA choice chucks were made into three RSB products: untrimmed ...

Collagen, recognized as a fundamental protein present in biological tissues and structures, plays a crucial role in maintaining organ structure and tissue integrity. Microbial collagenases are specific for the degradation of collagen. The specific three-stranded helix region of natural collagen can be identified and hydrolyzed by microbial collagenases
