ABSTRACT Reducing saturated fat while preserving the sensory quality of full‐fat foods remains a major formulation challenge because fat contributes simultaneously to body, lubrication, flavor delivery, and thermal transitions. Carbohydrate–protein (CP) hydrogels are increasingly explored as oil‐free fat replacers, but many systems are developed and ...

Coarse‐grained MD simulations capture the effects of liposome composition and size on protein adsorption onto the liposome surface, in agreement with experiments. Liposome‐protein interactions are energetically stabilized by the replacement of abundant proteins with high‐affinity proteins on the liposome surface through electrostatic and hydrophobic ...

Monotonicity Conditions in the Mimetic Finite Difference Method
The maximum principle is a major property of solutions of partial differential equations. In this work, we analyze a few constructive algorithms that allow one to embed this property into a mimetic finite difference (MFD) method. The algorithms search in the parametric family of MFD methods for a member that guarantees the discrete maximum principle ...

We developed a real‐time, label‐free, high‐throughput cell‐on‐a‐chip system based on a metasurface plasmon resonance colorimetric sensor (MetaSPRCS) to evaluate intestinal barrier function. This platform enables continuous monitoring of cell adhesion, proliferation, and barrier layer formation, disruption, and repair.
