Moisture migration during cooling of 290-kg Cheddar cheese blocks is a problem. The problem is of greater magnitude in reduced and low fat varieties. The objective of this study was to design and evaluate the performance of a laboratory-scale apparatus for simulation of temperature induced moisture migration in 290-kg blocks of Cheddar cheese.

Ionic Precursors Transformed Into Vinyl Acetate Synthesis Catalyst via Reaction‐Driven Restructuring

This work demonstrates that a simple physical mixture of Pd and Au ionic precursors, KOAc promoter, and SiO2 support can transform into a highly active vinyl acetate synthesis catalyst through reaction‐driven restructuring. The results highlight reaction‐induced restructuring as an innovative and sustainable catalyst design strategy.
