Gourmet Salts and Molecular Gastronomy

Effects of molecular diffusion of salt in salt-gradient solar ponds
Applied Energy, 1988Abstract The effect of molecular diffusion of salt is not only significant for the smoothing process during the pond's establishment, but also for its operation. An analysis is presented to calculate the rate of salt transport within an isothermal liquid column, according to the molecular diffusion process.

Molecular Insights Into Salt Stress Adaptation in Plants
Plant, Cell & EnvironmentABSTRACTThe significant rise in soil salinity has had detrimental effects on global agricultural production, negatively impacting overall plant health and leading to a decline in productivity. As a protective response, plants have developed diverse regulatory mechanisms to counteract these adverse conditions.

Crystal and Molecular Structure of Phosphoenolpyruvate Salts
Phosphorus, Sulfur, and Silicon and the Related Elements, 1990Abstract Phosphoenolpyruvate (PEP) plays central role in the storage and transfer of energy in biological systems. Its free energy of hydrolysis (-58.5 kJ mol−1) is the highest known for monoesterified phosphate esters. Depending on pH PEP can occur as monoanion, dianion and trianion or as tri-basic acid.

Spontaneous Molecular Bromine Production in Sea‐Salt Aerosols
Angewandte Chemie International EditionAbstractBromine chemistry is responsible for the catalytic ozone destruction in the atmosphere. The heterogeneous reactions of sea‐salt aerosols are the main abiotic sources of reactive bromine in the atmosphere. Here, we present a novel mechanism for the activation of bromide ions (Br−) by O2 and H2O in the absence of additional oxidants.

Molecular weight distribution of graham salt
Journal of Polymer Science, 1961AbstractA method is described for determining the molecular weight distribution of Graham salt (sodium polyphosphate) by fractional precipitation with acetone. The method differs from that of Van Wazer4 in the following respects. (1) The use of smaller samples permits the fractionation to be performed in less time with consequent less hydrolytic ...

Crystal structures of mirtazapine molecular salts
CrystEngComm, 2011A few molecular salts of the anti-depressant drug R/S-Mirtazapine with organic carboxylic acids, its HCl salt, and Mirtazapine hemihydrate were crystallized and characterized by X-ray diffraction, IR and Raman spectroscopy, and thermal analysis. Whereas Mirtazapine base sublimed above ambient conditions its molecular salts do not show any sublimation ...

Molecular dynamics: conductivity of a fused salt
Chemical Physics Letters, 1979The electrical conductivity of a model of liquid KCl was determined by molecular dynamics computations. In a constant temperature ensemble, the linear regime for Ohm's law was shown to extend up to at least 1.5 × 107 V/cm. The results compared favorably with that calculated by monitoring the power dissipation and with the zero-field value obtained via ...

Molecular modelling of organic superconducting salts
AIP Conference Proceedings, 1999We have undertaken a detailed computational study of the organic superconducting charge transfer BEDT-TTF salts. The salts have wide ranging physical properties which are derived primarily from the packing of the donor-radical cations. Electronic structure calculations have been performed at the molecular and periodic level using Density Functional ...

Dynamics of Salt Tolerance: Molecular Perspectives
2018Plant being sessile has to face many environmental stresses and develop physiological and biochemical mechanisms to withstand those stresses. Salinity is one of the major stresses that affects the plant growth and imposes direct impact on productivity and yield. The lack of good-quality irrigation water is forcing farmers to use alternative or degraded
