Food Science &Nutrition, Volume 13, Issue 5, May 2025.Germination reduced phytic acid (7.03%–75.65%) and trypsin inhibitor activity (4.72%–39.20%), while its effects on tannins and saponins varied. It generally improved in vitro protein digestibility except in peas and increased TDS while decreasing resistant starch, except in chickpeas.
