The occurrence and determination of N-Nitroso compounds

Abstract This article reviews the occurrence of nitrosamines in food products, the methods used for their determination, and their associated problems. Low concentrations of nitrosamines (ppb) have been primarily confirmed in fish exposed to nitrite and in cured meats.
