Development of an HPLC-PDA Method for the Determination of Capsanthin, Zeaxanthin, Lutein, β-Cryptoxanthin and β-Carotene Simultaneously in Chili Peppers and Products

open access: yesMolecules, 2023
For the better standardization and widespread application of the determination method of carotenoids in both chili peppers and their products, this work reports for the first time the simultaneous determination of five main carotenoids, including ...

Production of a Novel Superoxide Dismutase by Escherichia coli and Pichia pastoris and Analysis of the Thermal Stability of the Enzyme

open access: yesFrontiers in Nutrition, 2022
Previously, a new copper-zinc SOD (CuZnSOD) isolated from chestnut rose (Rosa roxburghii) with good stability was described. In this study, the biosynthetic approach was used to create recombinant CuZnSOD.

Research Progress on the Stability of Anthocyanins and Their Interactions with Proteins: a Perspective Based on the pH-Dependent Multistate System of Anthocyanins

open access: yesShipin gongye ke-ji
Anthocyanins are water-soluble natural colorants found in plants, known for their multiple health benefits. However, their structural instability, which leads to color fading and degradation in response to pH changes, presents significant challenges for ...

Nutritional improvement of plant foods by non-thermal processing [PDF]

open access: yesProceedings of the Nutrition Society, 2002
As a result of the increasing consumer demand for minimally-processed fresh-like food products with high sensory and nutritional qualities, there is a growing interest in non-thermal processes for food processing and preservation. Key advanced technologies such as high-pressure processing, pulsed electric fields, dense gases and ultrasound are being ...

Structural instability impairs function of the UDP‐xylose synthase 1 Ile181Asn variant associated with short‐stature genetic syndrome in humans

open access: yesFEBS Letters, EarlyView.
The Ile181Asn variant of human UDP‐xylose synthase (hUXS1), associated with a short‐stature genetic syndrome, has previously been reported as inactive. Our findings demonstrate that Ile181Asn‐hUXS1 retains catalytic activity similar to the wild‐type but exhibits reduced stability, a looser oligomeric state, and an increased tendency to precipitate ...

Profiling Phenolic Composition in Pomegranate Peel From Nine Selected Cultivars Using UHPLC-QTOF-MS and UPLC-QQQ-MS

open access: yesFrontiers in Nutrition, 2022
Pomegranate is widely cultivated across China, and the phenolics in its peel are principal components associated with health benefits. Ultra-high performance liquid chromatography coupled to a quadrupole time-of-flight mass spectrometer (UHPLC-QTOF-MS ...

Calpain small subunit homodimerization is robust and calcium‐independent

open access: yesFEBS Letters, EarlyView.
Calpains dimerize via penta‐EF‐hand (PEF) domains. Using single‐molecule force spectroscopy, we measured the strength and kinetics of PEF–PEF homodimer binding. The interaction is robust, shows a transient conformational step before dissociation, and remains largely insensitive to Ca2+.

Mergers and Non-Thermal Processes in Clusters [PDF]

open access: yesHighlights of Astronomy, 2005
AbstractClusters of galaxies generally form by the gravitational merger of smaller clusters and groups. Mergers drive shocks in the intra-cluster gas which heat the intra-cluster gas. Mergers disrupt cluster cooling cores. Mergers produce large, temporary increases in the X-ray luminosities and temperatures of cluster; such merger boost may bias ...
