Development and Morphological/Microstructural Characterization of a Novel Synergic Synbiotic Co‐Encapsulated Lactobacillus spp. Consortium and Kale Powder

A co‐encapsulated synbiotic of Lactobacillus spp. and kale powder was developed using a 1.3% alginate matrix, achieving 93% encapsulation efficiency. Kale at 1% significantly enhanced bacterial growth. Polyphenols acted as both prebiotics and protective agents, preserving > 85% viability after storage at 4°C.
