Structural Characterization and Functional Properties of Turmeric Pomace Polysaccharides‐Curcumin Nanoparticles

Structural characterization confirms turmeric pomace polysaccharides (TPP) efficiently loads curcumin (CUR) into TPP‐CUR nanoparticles. The nanoparticles exhibit good environmental stability, sustained intestinal release of CUR, and antioxidant protection in H₂O₂‐stressed HepaRG cells.

Cold Plasma Processing of Chickpeas and Lentils Increases Water Transport Into Grains and Results in Softer Texture After Cooking

Cold plasma using only air was used as a pretreatment for chickpeas and lentils. Treated samples took up much more water and had more rapid water uptake compared to untreated samples. After cooking, the legumes had softer textural properties which could make them more amenable to food processing.

AEGC conferred substantial resistance to weight gain and reduced food intake. AEGC may alleviate LR by regulating the levels of LEP and ADP. AEGC elevated the diversity of gut microbiota and reconstructed the composition. Changes such as CAG‐873 in gut microbiota may be the reason why AEGC alleviates LR.
