Effects of Β-sitosterol oleogel on fat uptake reduction, physicochemical properties, oxidative stability, and sensory characteristics of fried surimi fish balls

open access: yesJournal of Agriculture and Food Research
Surimi, a minced fish meat, is available in various forms, including deep-fried surimi. However, deep-fried surimi tends to absorb high amounts of oil during frying, potentially contributing to obesity and cardiovascular diseases.

Application of CMC as Thickener on Nanoemulsions Based on Olive Oil: Physical Properties and Stability

open access: yesInternational Journal of Polymer Science, 2016
Carboxymethyl cellulose (CMC) is a hydrocolloid with surface activity that could act as emulsifiers in oil-in-water emulsions; however the principal role is that it acts as structuring, thickening, or gelling agent in the aqueous phase.

Biomimetic Iridescent Skin: Robust Prototissues Spontaneously Assembled from Photonic Protocells

open access: yesAdvanced Functional Materials, EarlyView.
Uniform nanoparticles are induced to form arrays (photonic crystals) in the cores of biopolymer capsules, endowing these ‘protocells’ with structural color. These protocells are then assembled into large self‐standing objects, i.e., prototissues, with robust mechanical properties as well as iridescent optical properties.

Microporous Microgel Assemblies Facilitating the Recruitment and Osteogenic Differentiation of Progenitor Cells for Bone Regeneration

open access: yesAdvanced Functional Materials, EarlyView.
There is a significant need for biomaterials with well‐defined stability and bioactivity to support tissue regeneration. In this study, we developed a tunable microgel platform that enables the decoupling of stiffness from porosity, thereby promoting bone regeneration.

Smart, Bio‐Inspired Polymers and Bio‐Based Molecules Modified by Zwitterionic Motifs to Design Next‐Generation Materials for Medical Applications

open access: yesAdvanced Functional Materials, EarlyView.
Bio‐based and (semi‐)synthetic zwitterion‐modified novel materials and fully synthetic next‐generation alternatives show the importance of material design for different biomedical applications. The zwitterionic character affects the physiochemical behavior of the material and deepens the understanding of chemical interaction mechanisms within the ...

Structure and functions of oleosomes (oil bodies)

open access: yesAdvances in Colloid and Interface Science, 2019
Oleosomes are natural oil droplets, abundant in plants and more specifically in seeds, composing 20-50 wt% of their mass. The structure of oleosomes is the mechanism that seeds developed to safely store energy in the form of triacylglycerols and use it during germination.

Cool Kitchen: Processing Starch and Eggshell Powder into Sustainable Coatings for Passive Daytime Cooling

open access: yesAdvanced Functional Materials, EarlyView.
A food‐grade cooling composite made from starch and recycled eggshell powder offers a scalable, ultra‐low‐cost solution for passive daytime radiative cooling. Easily prepared using basic kitchen tools, this material empowers communities, even in areas with limited infrastructure, to stay cooler during worsening summer heat waves.

Valorization of Spent Coffee Grounds Oil for the Production of Wax Esters: Enzymatic Synthesis and Application in Olive Oil Oleogels

open access: yesGels
Spent coffee grounds, the main by-product of the coffee-brewing process, were valorized as a renewable source of lipids for the synthesis of novel wax esters and as an alternative and sustainable oil-structuring agent for the production of oleogels.

Chemoselective Sequential Polymerization: An Approach Toward Mixed Plastic Waste Recycling

open access: yesAdvanced Functional Materials, EarlyView.
Inspired by biological protein metabolism, this study demonstrates the closed‐loop recycling of mixed synthetic polymers via ring‐closing depolymerization followed by a chemoselective sequential polymerizations process. The approach recovers pure polymers from mixed feedstocks, even in multilayer formats, highlighting a promising strategy to overcome a
