Oil Uptake Properties of Fried Batters from Rice Flour

Journal of Agricultural and Food Chemistry, 1999
Batters were prepared, using rice flour as the main component, and analyzed for their oil uptake properties during frying. Rice flour resisted oil absorption better but was less effective as a thickening agent than wheat flour. Of the rice components, increased amylose in the amylopectin/amylose ratio of the starch decreased the batter oil uptake ...

Mechanisms of Oil Uptake in French Fries

2016
Deep fat frying causes a poor perception of fried products because it generates thermooxidized substances and is associated with overweight issues leading to health concerns. Hence, rupture technologies are highly desirable to reduce oil uptake dramatically.

Criterion for Oil Uptake during Deep‐fat Frying

Journal of Food Science, 1993
ABSTRACT The effect of added powdered cellulose and methyl cellulose on oil uptake during deep‐fat frying of donuts and falafel balls was determined. A new criterion, U R , expressing the oil uptake ratio between the weight of oil uptake and the weight of water removed was ...

Multiscale modeling of oil uptake in fried products

AIChE Journal, 2015
Oil–air biphasic flow has been simulated at the scale of an entire potato tuber tissue using a Kinetic Monte‐Carlo (KMC) formulation parameterized on microscopic observations. Extrapolations to more general configurations are proposed by combining the proposed KMC framework with oil momentum equations integrated at microscopic scale.

Solvent Gas Uptake of CO2 and Propane in Heavy Oil for Enhanced Oil Recovery

SPE Canadian Energy Technology Conference and Exhibition, 2023
Abstract Cold heavy oil production utilizes the energy inherent in the reservoir for primary oil production and has been applied with commercial success in the area surrounding Lloydminster. The primary cold production of heavy oil can be expected to produce about 5-10% of initial oil in place before the process becomes uneconomical ...

CO2 and SO2 uptake by oil shale ashes

Journal of Thermal Analysis and Calorimetry, 2009
In the present research, CO2 and SO2 binding ability of different oil shale ashes and the effect of pre-treatment (grinding, preceding calcination) of these ashes on their binding properties and kinetics was studied using thermogravimetric, SEM, X-ray, and energy dispersive X-ray analysis methods. It was shown that at 700 °C, 0.03–0.28 mmol of CO2 or 0.

An Oil-Based Model of Inhalation Anesthetic Uptake and Elimination

Anesthesiology, 1989
An oil-based model was developed as a physical simulation of inhalation anesthetic uptake and elimination. It provides an alternative to animal models in testing the performance of anesthesia equipment. A 7.5-1 water-filled manometer simulates pulmonary mechanics.

Uptake of Phosphorous by Oil Palm Nursery Seedlings

The Planter, 2007
Five sources of phosphate fertilisers with various strengths of citrate solubility were experimented on large polybag nursery seedlings at three rates viz; 5, 10 and 20 g per seedling. The three rates were calculated and standardised equivalent to citrate soluble P2O5 with the objective to provide indications on the efficiency of phosphate uptake by ...

In-treatment cooling during thermal modification of wood in soy oil medium: soy oil uptake, wettability, water uptake and swelling properties

European Journal of Wood and Wood Products, 2009
Thermal modification of wood is a process which has gained wider acceptability as an alternative to chemical treatment in wood preservation. In order to maximize the benefits of this technique several options have been adopted including the use of soy oil in transferring the heat to the wood.

Monoglyceride-Based Organogelator for Broad-Range Oil Uptake with High Capacity

Langmuir, 2015
Oil/water separation has been a worldwide subject because of increasing release of oil-containing wastewater as well as several marine oil spills. The phase-selective organogelators (PSOGs) are thought to offer a potential and effective implement for addressing this issue.
