牦牛脂肪不同脱腥处理比较及其腥味物质分析Comparison of different deodorization methods for yak fat and its fishy odor substances analysis

旨在提高牦牛脂肪的综合利用,以新鲜的牦牛脂肪为原料,分别采用酵母葡聚糖、活性干酵母、β-环糊精、茶多酚对牦牛脂肪进行脱腥处理,以牦牛脂肪所炼制的牦牛油腥味值作为评价指标,采用单因素实验优化4种脱腥方法的条件,并采用顶空固相微萃取-气相色谱-质谱联用(HS-SPME-GC-MS)技术对脱腥处理前后牦牛脂肪所炼制的牦牛油的挥发性风味物质组成及含量进行分析,采用相对气味活度值(ROAV)确定牦牛脂肪可能的腥味物质,并对脱腥处理前后牦牛油进行感官评价。结果表明:4种脱腥方法的最佳条件为酵母葡聚糖质量分数1.2%、

旨在为栀子的进一步开发和利用提供参考数据,使用正己烷索氏提取法和乙醇提取法提取产自湖南宁乡、江西九江、江西抚州、福建福鼎、江西金溪和江西樟树的6种栀子籽中的油脂,并对其理化性质、脂肪酸组成、功能成分(西红花苷Ⅰ、磷脂、 β-谷甾醇)含量及活性(DPPH自由基清除能力、紫外吸收能力)进行比较。结果表明:正己烷索氏提取法的栀子油得率高于乙醇提取法的;以正己烷索氏提取法提取栀子油,福建福鼎的栀子油得率最高,为(15.41±0.21)%,且其碘值和皂化值(KOH)最高,分别为(89.87±5.25) g/100

ABSTRACT This study presents the first GC‐MS–based analyses of wide horizontal rim vessels with well‐defined funerary contexts, from Middle Bronze Age Portugal (Quinta do Amorim 2 and Pego). 紫外-LiCl联合ARTP诱变选育高产花生四烯酸的 高山被孢霉突变株Breeding of Mortierella alpina mutants with high yield of arachidonic acid by UV-LiCl combined with ARTP mutagenesis

为得到遗传性状稳定、高产花生四烯酸(ARA)的高山被孢霉菌株,以实验室保藏的高山被孢霉FD-1为出发菌株,采用紫外-LiCl联合常压室温等离子体(ARTP)技术进行诱变处理,并进行TTC平板初筛和摇瓶发酵复筛。结果表明,经紫外-LiCl联合ARTP诱变处理,获得一株高产ARA的高山被孢霉突变株Z6-A23。菌株Z6-A23所产油脂中ARA含量高达44.57%,ARA产量达3.62 g/L,分别较出发菌株FD-1提高了75.40%和223.21%。经10次传代培养,突变株Z6-A23代谢合成ARA性能稳定,
