Enhancement of oleaster (Elaeagnus angustifolia L.) flour properties via instant controlled pressure drop (DIC) technique

International Journal of Food Science &Technology, Volume 59, Issue 10, Page 7629-7638, October 2024.
The influence of pressure on colour values is more pronounced than processing times. The DIC treatment adversely affected the techno‐functional properties of oleaster flour (OF). The DIC treatment significantly enhanced the chemical composition of the OF. There was a positive correlation between pressure and free and total phenolic contents.
