Productions and Functional Properties of Palm Sugars

open access: yesWalailak Journal of Science and Technology (WJST), 2018
Sugar profile, antioxidant properties, DNA damages, and in vitro predicted glycaemic index (pGI) of palm sugars (syrup and powder) were investigated in comparison with refined cane sugar. It was found that palm sugars exhibited better nutritional qualities than refined cane sugars.

Influence of Fat Oil Binding Capacity on Shelf‐Life and Consumer Acceptance of a Chocolate‐Based Model System

open access: yesJournal of the American Oil Chemists' Society, EarlyView.
ABSTRACT In chocolate‐coated products, oil migration can lead to chocolate softening and discoloration, filling hardening, and reduced consumer acceptance. This study examined three fats (soy‐, palm‐, and palm‐kernel (PK) based), crystallized under different conditions (cooling rate and high intensity ultrasound (HIU)) with differing oil binding ...

Effect of Cyclic Heat Exposure on the Growth Performance and Metabolism of Broilers Fed Palm Kernel Meal

open access: yesAnimal Research and One Health, EarlyView.
The aim of our study is to evaluate the interaction between HS and the incorporation of PKM in broiler chicken diets, as well as its effect on growth performance and metabolism. Based on the results obtained, PKM supplementation failed to mitigate the adverse effects of heat stress in broiler chickens. ABSTRACT The aim of this study was to evaluate the

Effect of Thermal Processing of Palm Sap on the Physico-Chemical Composition of Traditional Palm Sugar

open access: yesPakistan Journal of Biological Sciences, 2008
During the production of palm sugar, the palm sap (Arenga pinnata) is heated up to 150 degrees C. Besides the hydrolysis of carbohydrate to generate reducing sugars and degradation of amino acid, many physicochemical changes produced at all these temperatures, having a significant impact on the overall quality of palm sugar.
