Comparison of Likings towards Fish Cutlet Made from Pangasianodon hypophthalmus

This study was performed to compare the likings of fish (Pangas) and chicken cutlet as well as to find the best preparations among three fish cutlets. Taking three groups- Teachers, staffs, and students as panelists, it was found that all the panelists preferred one fish cutlet equally with chicken cutlet.

Die Zusammensetzung der unbehandelten Muskulatur von 30 Pangasien (Pangasianodon hypophthalmus) und 40 Zandern (Sander lucioperca) wurde untersucht. Der mittlere Wassergehalt in der Muskulatur der Pangasien lag bei 77,5 %; der Proteingehalt bei 19,0 %. Die Bestimmung des pH-Werts ergab einen Wert von 6,5.
