植物甾醇酯合成过程中的氧化变化规律Patterns of oxidative changes in the synthesis of phytosterol esters
旨在提高植物甾醇酯的产品品质,研究了反应温度、反应底物、氮气以及抗氧化剂等因素对植物甾醇酯合成过程中氧化和脱水产物含量的影响。结果表明:植物甾醇酯中氧化和脱水产物水平随着反应温度的升高、脂肪酸不饱和度的增加以及链长的缩短而显著增加;采用氮气保护措施能够有效降低植物甾醇氧化产物的水平,而添加抗氧化剂则能够在减少植物甾醇氧化产物水平的同时显著降低脱水产物的水平。综上,通过优化反应条件、氮气保护和添加抗氧化剂可有效控制植物甾醇酯合成过程中的氧化和脱水产物的水平。To improve the quality ...
