Effect of Fruit Maturation Stage on the Chemical Composition and Antioxidant and Cytotoxic Activities of Piper nigrum Essential Oil

open access: yesFlavour and Fragrance Journal, Volume 41, Issue 4, Page 908-922, July 2026.
The essential oils of Piper nigrum show marked chemical and biological variation across fruit maturation stages. Ripe fruits yield oils with the strongest antioxidant and cytotoxic activities, demonstrating that maturation directly modulates volatile composition and enhances the bioactive potential of this aromatic species.

Synthesis of piperine derivatives [PDF]

open access: yes, 2012
The berries of black pepper (P. nigrum) are well known for its pungent smell and biting taste. Piperine which is one of the major amide present in P. nigrum contributes to the medicinal properties of the species.

A distinct structural mechanism underlies TRPV1 activation by piperine. [PDF]

open access: yes, 2019
Piperine, the principle pungent compound in black peppers, is known to activate the capsaicin receptor TRPV1 ion channel. How piperine interacts with the channel protein, however, remains unclear.

Antioxidants in Plant‐Based Food Matrices: From Structure–Activity and Degradation Kinetics to Formulation Design

open access: yesComprehensive Reviews in Food Science and Food Safety, Volume 25, Issue 4, July 2026.
ABSTRACT Plant‐based antioxidants are widely incorporated into foods to retard oxidative deterioration and to deliver health‐related benefits. Yet, their in‐product and in vivo performance frequently diverges from predictions based on solution‐phase chemical assays, because matrix interactions, processing history, and host metabolism reshape both ...

Piperine Induces Hepatic Low-Density Lipoprotein Receptor Expression through Proteolytic Activation of Sterol Regulatory Element-Binding Proteins. [PDF]

open access: yesPLoS ONE, 2015
Elevated plasma low-density lipoprotein (LDL) cholesterol is considered as a risk factor for atherosclerosis. Because the hepatic LDL receptor (LDLR) uptakes plasma lipoproteins and lowers plasma LDL cholesterol, the activation of LDLR is a promising ...

The Enhanced Whey Protein Oral Bioavailability and Muscle Anabolism Ability by a Simple and Effective Piperine‐Whey Protein Synergistic Codelivery System

open access: yesAdvanced Science, Volume 13, Issue 32, 9 June 2026.
WP(Pip) is a mixture of whey protein and piperine‐loaded nanoemulsion stabilized by WP through microfluidic homogenization. Acting as a “smart key,” piperine opens epithelial tight junctions to enhance absorption of whey protein and, thereby increasing circulating amino acid availability, synergistically up‐regulates the mTOR signaling pathway in ...

Bioenhancer‐Driven Modulation of Membrane Dynamics Improves B‐Vitamin Uptake in Caco‐2 Cells

open access: yesChemFoodChem, Volume 2, Issue 2, June 2026.
Natural bioenhancers such as extracts from ginger, turmeric, black pepper, and spearmint increase the uptake of vitamins B1, B5, B6, and B7 in Caco‐2 cells. Micellized formulations further increase efficacy. These findings indicate that altered membrane fluidity contributes to enhanced cellular absorption, providing a new route to improve vitamin B ...
