ABSTRACT Foam‐mat drying (FMD) of jabuticaba pulp (JP) was studied using hot air (HA‐FMD) and infrared radiation (IR‐FMD). IR‐FMD offers higher energy efficiency, faster drying, and more uniform heating, generally producing better‐quality products compared to HA‐FMD.
