El yacón pertenece a la familia de las compuestas (Compositae o Asteraceae). Su nombre científico es Smallanthus sonchifolius. Previamente se le ha identificado como Polymnia sonchifolia o Polymnia edulis.

Yacon is consumed in natura, dehydrated or in leaves and roots infusion, because of its high inulin content. Dehydrated yacon (Polymnia sonchifolia) roots and leaves were analyzed to compare its chemical composition. Samples cultivated in Curitiba Paraná State were analyzed.
