Toxicological evaluation of potassium sorbate added to cigarette tobacco
Food and Chemical Toxicology, 2008Potassium sorbate (PS) may be incorporated in blended cigarette tobacco either as a mold growth inhibitor in processed tobacco sheet material, or as a preservative in flavor systems or paper adhesives. To evaluate the effect of PS addition, neat material pyrolysis studies, smoke chemistry and biological activity studies (bacterial mutagenicity ...

Pentadiene production from potassium sorbate by osmotolerant yeasts
International Journal of Food Microbiology, 2004Some yeast strains belonging to the species Zygosaccharomyces rouxii and Debaryomyces hansenii are capable of spoiling sorbate containing high-sugar foods by producing pentadiene, a volatile compound reported to have 'petroleum-like' odour. Quantification of the diminution of sorbate and the subsequent increase of pentadiene was performed by growing ...

Sodium benzoate and potassium sorbate preservatives in Iranian doogh
Food Additives & Contaminants: Part B, 2014Sodium benzoate and potassium sorbate are two common preservatives used in Iran, yet use of these preservatives in doogh (Iranian dairy-based drink) is forbidden according to national standards. The aim of this study was to consider the presence of these preservatives in doogh by high-performance liquid chromatography with UV detection (HPLC-UV).

Utilization of potassium sorbate by tobacco spoilage fungi
Mycological Research, 1990Aspergillus, Eurotium and Penicillium species (total of 11 isolates) were examined for their ability to utilize potassium sorbate as a sole carbon source in liquid culture, under different pH and temperature conditions. Of these, only A. flavus, A. versicolor and P. chrysogenum were able to grow in the presence of 0·1 to 0·4% (w/v) sorbate at pH

Evaluation of the genotoxic potential of sorbic acid and potassium sorbate
Food and Chemical Toxicology, 1992The genotoxic potential of sorbic acid and potassium sorbate was investigated in vivo and in vitro. Oral administration of sorbic acid (up to 5000 mg/kg body weight) did not induce sister chromatid exchanges or the formation of micronuclei in bone marrow cells of mice.

Potassium sorbate inhibition of yeast alcohol dehydrogenase
Biochimica et Biophysica Acta, 1963Abstract Potassium sorbate was found to inhibit yeast alcohol dehydrogenase (alcohol: NAD oxidoreductase, EC 1.1.1.1) maximally at the pH optimum of the enzyme; viz . pH 8.5. Potassium sorbate competed with NAD and ethanol for a site on the enzyme but in an irreversible manner. Sorbamide was found to be approx. 1000 times a better inhibitor of yeast

Mechanisms in the inhibition ofListeria monocytogenes by potassium sorbate
Food Microbiology, 1991Abstract Listeria monocytogenes was injured by treating the bacterium with a solution of 1% (w / v) potassium sorbate for 30 min. Injury was shown by inability of the bacterium to tolerate 6% NaC1 in tryptose agar (TA) and ability to grow on TA with no added salt.

Resistance of Sporolactobacillus to potassium sorbate and sodium nitrite
International Journal of Food Microbiology, 1987Abstract The resistance of Sporolactobacillus to different concentrations of potassium sorbate and sodium nitrite in autoclaved glucose yeast-extract peptone broth, pH 6.0, was determined. The minimum inhibitory concentration of potassium sorbate that completely inhibited outgrowth of endospores and vegetative growth of Sporolactobacillus inulinus

Potassium Sorbate as a Preservative for High-Moisture Corn
Transactions of the ASAE, 1989ABSTRACT SHELLED corn initially at 18.7, 24 and 28% moisture content was treated with potassium sorbate and potassium sorbate plus propylene glycol. The chemical treatment levels used were 0.1, 0.4, 1.0, 1.5 and 2.5% (wet weight basis). The treated and untreated grain were stored without aeration and with a 0.11 m^ min~i Mg~^ air flow rate at ambient ...

Influence of various parameters on the browning of potassium sorbate in the presence of amines
Food Additives and Contaminants, 2000Potassium sorbate can undergo oxidation to form carbonyl moieties and cause browning. This investigation studied the fate of the compounds produced by auto-oxidation of potassium sorbate and measured the browning in the presence of amines. Experimental plans in which four factors were combined (temperature, oxygen, amine and light) led to the ...
