Aminopeptidase activity from the hepatopancreas of Procambarus clarkii

This study examined aminopeptidase in the digestive gland of the freshwater crayfish, Procambarus clarkii. The enzyme has a molecular weight of 74,000 and consists of two subunits of 28,000 and 46,000 Mr. The enzymatic activity is maximal at pH 8.6 and at 55°C and follows the Michaelis-Menten kinetics.
