A produção leiteira e o processamento de leite e derivados são importantes atividades do estado de Minas Gerais. A produção de queijos no Brasil com Inspeção Federal foi de aproximadamente 751 mil toneladas no ano de 2015 (USDA, 2015), resultando na produção de elevado volume de soro de leite.
