Proteini su najsvestranije molekule u živim sustavima, a obavljaju bitne funkcije u svim biološkim procesima. Građeni su od niza aminokiselina međusobno povezanih peptidnim vezama. Proteinskim inženjerstvom uvode se promjene u aminokiselinskom sastavu proteina što omogućuje dobivanje proteina željenih svojstava, odnosno dizajniranih proteina.
