核磁共振磷谱法测定乳制品中的磷脂含量Analysis of phospholipids content in dairy products by 31P NMR
为了测定乳制品中的磷脂含量,建立了基于核磁共振磷谱(31P NMR)的磷脂分析方法,并采用内标法对磷脂进行了定量。利用建立的方法对不同哺乳期母乳(初乳、过渡乳、成熟乳)、奶粉(全脂奶粉、婴幼儿配方奶粉)、富含乳磷脂的乳清蛋白粉、大豆磷脂及鸡蛋磷脂中的磷脂组成及含量进行了分析。结果表明:9种磷脂标准品的检出限范围为48.97~85.76 μg/mL,定量限范围为97.94~171.52 μg/mL,具有合理的加标回收率(83.40%~108.52%)和精密度(相对标准偏差小于15 ...

为提高大鲵下脚料的综合利用价值,以人工养殖大鲵肝脏为原料,采用酶解法提取大鲵肝油。先对蛋白酶进行了筛选,再采用单因素实验考察了pH、液固比、酶添加量、酶解时间、酶解温度对大鲵肝油提取率的影响,在此基础上利用响应面法优化大鲵肝油提取的工艺条件,并对精炼前后大鲵肝油的理化指标及脂肪酸组成进行了测定。结果表明:大鲵肝油提取的最优工艺条件为选用木瓜蛋白酶、pH 6.5、液固比2.5∶ 1、酶添加量2 100 U/g、酶解时间4 h、酶解温度65 ℃,在此条件下大鲵肝油提取率为79.92%;粗制大鲵肝油的酸值 ...
