The edible portion of the frog (Rana catesbiana) presents: protein 16.52 %, lipids 0.31 %, ash 0.89 % and moisture 83.68 %. The digestibility of the proteic fraction was 91.95 % for the raw meat and 83.41 % for cooked meat. The lipid fraction was rich in unsaturated fatty acids, being notable its high levels of arachidonic acid.
