Finite-size scaling for non-linear rheology of fluids confined in a small space
We perform molecular dynamics simulations in order to examine the rheological transition of fluids confined in a small space. By performing finite-size scaling analysis, we demonstrate that this rheological transition results from the competition between

Shear work induced changes in the rheology of model Mozzarella cheeses : a thesis presented in partial fulfilment of the requirements for the degree of Doctor of Philosophy in Food Technology at Massey University, Manawatu, New Zealand [PDF]
Mozzarella cheese is a pasta filata type of cheese. Its manufacture includes a kneading – stretching step that creates a fibrous protein network and distributes fat-serum channels to attain desirable melt functionality on a pizza.

Rheological and Micro-Rheological Properties of Chicory Inulin Gels
As a soluble fiber, inulin is present in many plants and has many applications in food and non-food products. In this work, we investigated the rheological properties of inulin dispersions at seven concentrations. The linear viscoelastic properties of inulin were determined using a conventional mechanical rheometer.

Solid Freeform Fabrication of Artificial Human Teeth [PDF]
In this paper, we describe a solid freeform fabrication procedure for human dental restoration via porcelain slurry micro-extrusion. Based on submicron-sized dental porcelain powder obtained via ball milling process, a porcelain slurry formulation has ...

On Rheological Properties and Structure of Kamaboko-XI
The tensile relaxation modulus reduced to 25°C in the time scale range from 3×10-2 sec to 1 ×106 sec was determined, and the relaxation spectrum was calculated for kamaboko. A comparison of the relaxation spectra for various kamaboko varying in tensile tough-ness (i.e., the strength of ashi) gives the following information: (1) There is a very good ...

Linear viscoelasticity of entangled wormlike micelles bridged by telechelic polymers : an experimental model for a double transient network [PDF]
We survey the linear viscoelasticity of a new type of transient network: bridged wormlike micelles, whose structure has been characterized recently [Ramos and Ligoure, (2007)].
