Obradom glava i utroba srdele goleme (Sardinella aurita) enzimom Alcalase® dobiveni su hidrolizati proteina ribe (fish protein hydrolysates – FPHs) različitih stupnjeva hidrolize (degree of hydrolysis – DH od 6,62; 9,31 i 10,16).
