Cilj rada bio je ispitati utjecaj sporog i brzog smrzavanja mišićnog tkiva lokarde (scomber colias)na fizikalne i električke parametre. Uzorci su podvrgnuti dvostrukom smrzavanju. Mjereni su fizikalni parametri: aktivitet vode, sposobnost vezanja vode, gubitak mase uzrokova iscjeđivanjem tekućine i pH vrijednosti.
