Unfortunately for agriculture and horticulture, seed germination and vigor can be markedly reduced by a number of factors, including the action of microorganisms (i.e., bacteria and fungi), viruses, and nematodes.

The study assessed the health quality of wheat (Triticum aestivum L.) and barley (Hordeum vulgare L.) seed samples collected from formal and informal sector in Ethiopia and Syria. In Ethiopia, several seed-borne fungi were found on wheat samples: Cochliobolus sativum, Fusarium avenaceum, F. graminearum, F. nivale, F. poae and Septoria nodorum.

Fungal organisms developing in grain in store lead to hot spots and increased moisture content. Uncontrolled, deterioration is rapid, resulting in loss of viability in grain for seed, and off-flavours which render it unfit for milling and malting. Under certain conditions substances may be produced which are toxic to man and animals.

Seed is functionally defined as a reproductive unit, in contrast with grain that is fed to animals or used directly or indirectly as a food or in food products. Although the harvested propagule is the same, unlike grain the seed must be alive and capable of producing a seedling.
