Aroma volatiles of aubergine (Solanum melongena)
Phytochemistry, 1983Abstract Samples of the aroma volatiles of aubergine were obtained by well-established methods and were analysed by routine GC and GC/MS. Hydrocarbons comprised over 70 % of the samples and included 20 acyclic alkanes. A very low concentration of total volatiles ( ca 2.4 μg/kg) was produced.
