Particular emphasis is placed on the distinction between bottom‐up assembly, characteristic of natural dairy cheese, and top‐down structuring, typical of processed cheese and cheese analogues.

Highly Thermally Stable and Efficient Ru/MAFO Catalysts for Glucose Hydrogenolysis to 1,2‐Propylene Glycol

A low‐loading (1.5 wt%) Ru/MAFO spinel catalyst with strong metal–support interaction achieves 100% glucose conversion and 59.3% 1,2‐PG selectivity. Its exceptional thermal stability and resistance to Ru sintering enable stable recycling, offering a highly active and durable system for sustainable biorefinery applications.
