Harnessing the Interfacial Activity of Soluble Faba Protein‐Tannic Acid Conjugates for Enhanced Lipid Oxidative Stability of Oil‐in‐Water Emulsions

open access: yesJournal of the American Oil Chemists' Society, Volume 103, Issue 6, Page 581-595, June 2026.
ABSTRACT In oil‐in‐water emulsions, lipid oxidation begins at the interface between the two phases. One strategy to slow down this process is to place antioxidants at the interface, where they can directly block oxidative reactions. This study explored that idea by conjugating soluble faba bean protein with tannic acid using the free‐radical grafting ...

Formation and Characterization of Insoluble Anthocyanins‐λ‐carrageenan Biopolyelectrolyte Complexes: Structural Morphology, Thermal Stability, and Release Dynamics

open access: yesChemFoodChem, Volume 2, Issue 2, June 2026.
Insoluble biopolyelectrolyte complexes formed between blackberry anthocyanins and λ‐carrageenan are investigated. Optimal complexation occurs at low carrageenan ratios and acidic pH, producing porous hydrogel‐like structures with enhanced thermal stability.

Comparative analysis of drought indices to characterize drought in agro-climatic zones of Assam, northeast region of India

open access: yesNatural Hazards Research
Over the past two decades, Assam, a region prone to flooding, has seen frequent droughts due to reduced rainfall and rising temperatures. The study used different types of drought indices, including the Standardized Precipitation Index (SPI) and ...

Effect of Storage Temperature and Materials on Protein Quality and Functional Properties of Soybeans

open access: yesFuture Postharvest and Food, Volume 3, Issue 2, Page 206-219, June 2026.
Hermetic PICS bags combined with cool storage (15°C) effectively preserved soybean protein quality and functional properties ([protein solubility, emulsifying capacity, and oil absorption capacity] of soybean protein isolates) during storage. Polypropylene bags and 25°C accelerated protein deterioration lead to significant nutritional losses.
