Cyanogenic Compounds, Physicochemical Parameters and Metals in Water From Cassava Processing Areas: A Study in the Brazilian Amazon, Using Multivariate Analysis

open access: yesEnvironmental Toxicology, EarlyView.
ABSTRACT This study evaluated the water quality of artesian wells and effluents generated in cassava processing in a rural area of Bragança, Pará, with emphasis on physicochemical parameters, multielement composition, and cyanogenic compounds. The well water presented specific nonconformities, highlighting pH values below the recommended level and high

Quality Attributes of Tapioca Meal Fortified With Defatted Soy Flour

open access: yesAgrosearch, 2012
Tapioca is a dried starchy powdery extract made from cassava which is popular in the eastern part of Nigeria. It has little or no protein thus it needs to be fortified with protein rich crops like soy beans. Enriched tapioca meal was produced from cassava starch and defatted soy flour.

Optimized Stacking Ensemble Machine Learning for Nondestructive Toxicological Risk Assessment of Fish Meat Using Hyperspectral Imaging

open access: yesJournal of Food Safety, Volume 46, Issue 5, October 2026.
Hyperspectral imaging and an optimized stacking ensemble learning model are developed for rapid, nondestructive toxicological assessment of fish meat. This framework integrated multiple machine learning classifiers to accurately distinguish toxicologically contaminated fish from fresh samples using both reduced (25‐band) and full (224‐band) spectral ...

The Ability of Near-Infrared Spectroscopy to Discriminate Plant Protein Mixtures: A Preliminary Study

open access: yesAppliedChem, 2023
The aim of this paper was to evaluate the effect of two different matrices (e.g., starch base flour vs. protein base flour) on the ability of near-infrared (NIR) spectroscopy to classify binary mixtures of chickpea (protein), corn and tapioca (starch ...

Engineering Slowly Digestible Starch via Physical and Enzymatic Modification: Structural Mechanisms of Formation

open access: yesComprehensive Reviews in Food Science and Food Safety, Volume 25, Issue 5, September 2026.
ABSTRACT Dietary starch varies in digestion rate: Rapidly digestible fractions cause sharp postprandial glucose spikes linked to chronic disease, whereas slowly digestible starch (SDS) breaks down gradually, producing a moderate glycemic response. Increasing SDS content is therefore a key objective in developing carbohydrate‐rich foods with improved ...

Characterization of Coating Flour Based on Local Timor Corn Flour Modified with the Addition of Rice Flour, Tapioca Flour, and Glutinous Rice Flour

open access: yesJurnal Teknik Pertanian Lampung (Journal of Agricultural Engineering)
The application of pure corn flour (100%) as coating material tends to generate a tough texture, thus requiring an alternative formulation to obtain a crispier result. This research aimed to evaluate the physical, chemical, and sensory characteristics, as well as to determine the optimal coating flour composition.
