Effect of thermal treatments on: (a) capsaicin, (b) dihydrocapsaicin, and (c) SHU values of chili samples. Capsaicin (mg/kg), dihydrocapsaicin (mg/kg), and SHU values of control and thermally treated samples indicate a significant (p < .05) decrease in capsaicin content on roasting and frying.
