One of the most important quality criteria of olive oil is its metal content. Trace levels of metal ions, such as Fe and Cu, are known to have adverse effects on the oxidative stability of olive oil. Transition metals catalyse the decomposition of hydro-peroxides, aldehydes, ketones, acids and epoxide.

TRACE METALS IN CYSTIC FIBROSIS
Acta Paediatrica, 1982ABSTRACT. Serum zinc and copper concentration, 24 hrs urinary zinc and copper excretion, plasma selenium and red blood cell glutathione peroxidase activity were measured in 13 cystic fibrosis patients aged 6 to 15 years. The mean serum zinc value ± S. D. (17.3 μmol/1 ± 4.6) did not differ from that of the control group (17.9 μmol/1 ± 3.1).

The Analysis of Asbestos for Trace Metals
American Industrial Hygiene Association Journal, 1974An atomic absorption method for the determination of beryllium, cadmium, chromium, cobalt, copper, manganese, nickel, and thallium in asbestos materials is described. Samples are solubilized in 6N HC1 after a digestion procedure using 48% HF on a low temperature (130°C) hotplate.
