AbstractComplexes of well defined triglycerides have been produced by using interesterification. Simple triglycerides, i. e. trioelin, trielaidin and tristearin, were used in the randomized interesterification reactions. The interesterified glycerides have been controlled analytically with high performance liquid chromatography.
