Turkey breast meat was marinated with lactic acid (pH 4.0), yogurt whey, kefir, or yogurt (1:1, w/w) for 24 h at 4°C and then cooked at 185°C for 15 min. Fermented dairy‐based marinades improved meat quality without promoting excessive biogenic amine formation.

This study focuses on long non‐coding RNAs (lncRNAs), which are RNA molecules that do not code for proteins but play crucial roles in various biological processes.
