Grapes are used not only for wine but also for fresh fruit, dried fruit, and juice production. Wine is by far the major product of grapes and the focus of this chapter is on wine grape cultivars.

During the vegetative period 2015, 25 red and 34 white Vitis vinifera L. varieties which are maintained in the experimental vineyard of the Aristotle University of Thessaloniki were studied in terms of their ampelographic characteristics. The ampelographic study was done according to the OIV Descriptor List (Office International de la Vigne et du Vin).

Polyphenols from Vitis vinifera Seeds

The chemical composition of polyphenols from grape seeds was studied. It has been found that they contain four catechins and two proanthocyanidins. The probable structure of the proanthocyanidins was proposed on the basis of physicochemical investigations.
