The model compound is soluble in water but the polymers swell inhomogeneously when soaked in water.

Water sorption by powdered human callus was studied using a vacuum microbalance, X-ray powder diffraction and NMR relaxation. The sorption data were fitted to theoretical isotherms. At high relative vapour pressures an increase in the monolayer value was found which is probably related to the swelling of the material.

Water Sorption Properties of Extruded Zein Films
Journal of Agricultural and Food Chemistry, 2004Water interactions in extruded zein films were investigated through moisture sorption isotherms. Sorption isotherms of zein products were affected by composition and structure morphology. Zein powder showed moisture sorption hysteresis, which was not observed in extruded samples.
